The cuisine that we offer you is profoundly artisanal. The know-how inherited from ancestral family kitchens is found in our preparations. Thus, the pasta fresca is worked by hand, the ingredients of the risotto have not varied one iota, starting with the beef broth, the saffron pistils, and the parmigiano reggiano. The desserts are all homemade, as are the ice creams and sorbets. Since the beginning, the philosophy has not changed: to discover and promote the excellence of the products of the Italian peninsula, whose terroir is one of the richest and most abundant in the world. Prosciutto di Parma, mozzarella di bufala from Campania, risotto from the Po plains, dried and flavored tomato from Sicily, olio d'oliva from Tuscany, culatello from Zibello, pasta di Gragnano, and, like a diamond on the peninsular diadem, the white Alba truffle...
